THM Meal Plan for this Week

OH BOY. We are recovering from the flu, and I'm actually looking forward to getting in the kitchen and eating yummy food again!
This week, I wanted meals to be extra simple and extra delicious. We have a pretty packed schedule, and I need dinner to be doable – and on plan!

Burgers and Green Beans –
I keep burgers VERY simple and tasty, and I make Green Fries from page 218 of the Trim Healthy Mama Cookbook to go with them. I skip the bun, but my family will sometimes eat them and sometimes skip them – I really only pick up off-plan buns if they are on sale, so that determines what everyone's burgers look like.

Pan-Fried Chicken and Roasted Brussels Sprouts-

Ingredients
Method
- Lightly spray your sauté pan with olive oil or coconut oil spray and heat to medium
- Carve the chickens, cutting the meat off of the bone (I like to leave the skin on) and add it to the pan
- Season and heat through
Chicken Tacos
This is one of my very favorite recipes!
Easy Chicken Tacos (two ways)
Ingredients
Method
- Bake three chicken breasts in the oven at 375 for 45 minutes (turning once) or until cooked through (and juices run clear). Alternative Option: Boil chicken breasts until cooked through (I know this sounds weird, but the chicken is so moist and yummy this way)
- Cool, then shred the chicken
- Put shredded chicken in a skillet and stir in canned tomatoes
- Season and stir together
- Simmer 15 minutes or until flavors are combined
- Taste and add seasoning if needed

Use S toppings and low-carb tortillas For an E taco:
Omit S toppings, serve with 0% Greek yogurt on a corn tortilla or on-plan tostada Crockpot Instructions – Alternative Method:
- Put three thawed chicken breasts in the crockpot
- Cover with three cans of diced tomatoes
- Sprinkle with cumin, salt, and pepper, then stir
- Cook on high 3-4 hours or until chicken is cooked through
- Taste an add seasoning if needed.
- Serve with desired toppings
Italian Pot Roast
I've been making this for MANY years – I use the “Drip Beef” recipe from Pioneer Woman and use THM's Wonderful White Blender Bread for myself. It's SO EASY and so tasty! I don't use the recipe card with onions, etc – I scroll down to the recipe with just the butter, beef, broth, seasoning, and peppers. Here's the link: Drip Beef Two Ways
Sheet Pan Chicken

Method
- Mix up the marinade and add about ¾ of the mixture to a ziploc bag with the chicken. Marinade for 30 minutes under refrigeration. (I have made this in a hurry before with no time to marinade, just pouring the marinade over the top of everything, and it was still delicious!)
- Preheat oven to 425°
- Spread veggies out over the pans and spoon remaining marinade over them, tossing to coat
- Nestle each chicken thigh into the veggies
- Bake at 425° for 40 minutes, remove from oven, and sprinkle feta cheese over the sheet pans
- Return to oven for 15-20 minutes or until chicken is cooked through
