Today I was in a rush (like always), and we have been eating out WAY too much, so I was trying to think of a dinner that I could make in 15 minutes or less when we got home from the grocery store. My kids reminded me of a quick Trim Healthy Mama pasta salad we used to make before my daughter was diagnosed with Celiac disease, and started whining – er, let's pretend they were asking politely – to have it for dinner.
This is the easiest thing ever, and it takes 15 minutes. OK, it may not be the easiest thing ever…doing nothing is probably the easiest thing ever. Sorry, my point is that the pasta salad is super easy, and you can toss most things in it with great results.
In our case, we grabbed a rotisserie chicken at the grocery store and some cubed cheese. Everything else was already in our pantry…hence the name, “Pantry Pasta Salad.” This recipe uses Dreamfields pasta. If you have questions about how this pasta can fit into a low glycemic recipe like this one, or how you can eat food like this while you're trying to lose weight, check out the Trim Healthy Mama book.
For my Celiac kid, we tossed the pasta salad ingredients with gluten free pasta from Trader Joe's. If I also needed to eat gluten free, as a Trim Healthy Mama I would substitute cauli rice or maybe even skip the noodles entirely. Here's the super easy recipe for a quick Trim Healthy Mama pasta salad…enjoy!
