Quick Trim Healthy Mama Pasta Salad (S)

Today I was in a rush (like always), and we have been eating out WAY too much, so I was trying to think of a dinner that I could make in 15 minutes or less when we got home from the grocery store. My kids reminded me of a quick Trim Healthy Mama pasta salad we used to make before my daughter was diagnosed with Celiac disease, and started whining – er, let's pretend they were asking politely – to have it for dinner. 

This is the easiest thing ever, and it takes 15 minutes. OK, it may not be the easiest thing ever…doing nothing is probably the easiest thing ever. Sorry, my point is that the pasta salad is super easy, and you can toss most things in it with great results. 

In our case, we grabbed a rotisserie chicken at the grocery store and some cubed cheese. Everything else was already in our pantry…hence the name, “Pantry Pasta Salad.” This recipe uses Dreamfields pasta. For my Celiac kid, we tossed the pasta salad ingredients with gluten free pasta from Trader Joe's. If I also needed to eat gluten free, as a Trim Healthy Mama I would substitute cauli rice or maybe even skip the noodles entirely. Here's the super easy recipe for a quick Trim Healthy Mama pasta salad…enjoy!

Ingredients
  1. Dreamfields Pasta (or ingredients for GF substitute)
  2. cubed cheese (like Colby Jack)
  3. cooked chicken (I grabbed a rotisserie chicken at the grocery store - but make sure there are no added sugars or gluten)
  4. 1 jar marinated artichoke hearts
  5. 1 jar green olives
  6. 1 bottle Newman's Own Olive Oil & Vinegar Dressing (or make your own)
  7. Anything else you feel like adding that's low carb...tomatoes, other veggies, etc.
Instructions
  1. Cook pasta according to package directions;
  2. While the pasta is boiling, chop the chicken (I used about 1/2 of the rotisserie chicken);
  3. Drain olives and artichoke hearts;
  4. Toss all ingredients in a bowl with drained pasta.
  5. **I made a separate batch with GF pasta for those in my family who eat GF.
Notes
  1. Dreamfields pasta tastes great, but please make sure you stick to the serving size on the side of the package. For the Rotini pasta, one serving size is 2/3 of a cup of dry pasta, so I measured out two servings into the boiling water for the two of us who would be eating the pasta salad. I tried to divide it evenly so that we wouldn't be going over the carb limit.
