I recently posted a list of my favorite (Trim Healthy Mama friendly) ground beef recipes. I have really loved having this list of ground beef meal ideas, because I have a lot of ground beef in my freezer, and sometimes I get tired of tacos. Almost immediately after I posted it, feeling confident and happy in my list-making skills, I was bombarded with messages about the high cost of ground beef. I have no control over the price of beef, but I can definitely recognize the need for a follow-up list of good chicken dinners.

Baked Chicken Thighs – no official recipe, but I season bone-in chicken thighs with Trader Joe's 21 Seasoning Salute and bake at 400 degrees for 20 minutes on each side, then serve with favorite veggies seasoned with butter and salt. Simple and delicious! I have pictures of this on Instagram if you want to see what the finished product looks like.
