½ cup cottage cheese
½ tomato, diced
1 green onion, thinly sliced
salt & pepper or other seasoning to taste
1 cucumber, halved and hollowed out
Combine cottage cheese, tomato, and green onion, then season with salt & pepper. Add your favorite seasonings to taste. Spoon into hollowed out cucumber, and drizzle with balsamic vinegar. If you’d rather have a more traditional salad, you can peel and dice the cucumber and toss it with the rest of the salad. This is a pretty simple light meal/big snack, and my kids loved eating the cottage cheese out of “boats” instead of a bowl. Enjoy!
