I find that when I have healthy, on-plan meals that I really look forward to eating (like these low carb green beans), it makes it a lot easier to stay on plan.


I’ve never really looked at THM Meals as boring or plain – we eat WELL on this meal plan! (If you want to learn more about starting the Trim Healthy Mama lifestyle, I have tons of tips and ideas for you here).

Since variety is the spice of life, I think it’s important to build my weekly meal plans on convenient, no-prep choices when I need to, and beautiful, easy recipes like this one whenever I’m able to sprinkle the in.

The low carb green beans recipe

This low carb green beans recipe is pretty easy and it calls for just five ingredients – green beans ( I prefer French green beans – haricot verts), bacon, oil, parmesan, and ranch seasoning. I like this homemade Ranch seasoning mix from Nana’s Little Kitchen.



🤫 Sometimes I use pre-cooked bacon to save time.

First, you’ll boil the green beans and arrange them in a baking dish.

Once they’re in the baking dish, you’ll add cheese, oil, seasoning, and bacon.

Note to my coaching clients: This is a THM “Heavy S” recipe.

These need to bake at 350 for 5-8 minutes until they’re done! These come together really quickly and are the perfect way to get some veggies in!

Parmesan Ranch Green Beans

Prep Time 5 minutes
Cook Time 15 minutes
Servings 4 (or double to serve more)

Ingredients
  

  • 4 cups fresh green beans
  • 2 Tbsp olive oil
  • 1/4 cup shredded parmesan
  • 1 Tbsp ranch seasoning
  • 2 strips bacon, crumbled

Instructions
 

  • Preheat oven to 350 degrees
  • Bring a heavily salted pot of water to boil
  • Cook the green beans for about 2 minutes (not more than 3) or until desired doneness
  • Drain the green beans
  • Place the green beans in a baking dish and toss with olive oil, then toss with ranch seasoning mix
  • Sprinkle with ranch and bacon
  • Bake for 5-8 minutes or until cheese is bubbly
