Cheap, Healthy Freezer Meals
If you've been visiting with me here at workingathomeschool.com for awhile, you may know that I'm not a fan of freezer cooking – I prefer to use this method to fill my freezer with dinners. But sometimes my freezer is just about empty and I know I have a busy month ahead, so it becomes necessary to ruin my kitchen for a few hours and go on a freezer cooking spree. I really needed some cheap, healthy freezer meals that I could throw together fairly quickly.
Having meals on hand and ready to go save a lot of time in the kitchen – and a lot of eating out. With things tightening up a bit financially around here, I was gearing up to do a major freezer cooking session when I realized that it was going to cost several hundred dollars. Gulp. Instead of investing quite that much money, I started looking for less-expensive freezable recipes – you know, the kind without an ingredients list as long as my arm. I chose several of these recipes to cook instead, and my wallet is much happier (I, however, am still grumbling about having to do a freezer cooking session, because I'm a whiner). Here's a list of cheaper, healthy freezer meals to keep your freezer stocked!

Chicken Fajitas (S)
Slow Cooker Fiesta Chicken (E) (omit tortilla chips)
Mexican Meatloaf (S)
Slow-Cooker Balsamic Chicken over Brown Rice (E)
Crockpot Chile Verde (S, if you use a fattier cut of meat)
Slow Cooker Sausage Tomato Soup (S) (omit pasta)
Cilantro Lime Chicken (S) (I omit the sugar, but you can substitute a pinch of stevia if desired)
