Trim and Healthy Father’s Day Menu
It’s almost Father’s Day! My husband is not much for gifts, but he loves a good meal. When I asked him what he’d like to eat, he immediately said, “Bacon.” Hoping for a little more direction, I prodded further until he said, “Steak. And Bacon.” This is a pretty great low-carb request, making it a Trim Healthy (Man, in this case), (S) meal. I’ve mentioned before that holidays are hard for me, but it’s especially hard when it’s a celebration of someone who doesn’t eat the Trim Healthy Mama way. I don’t want anyone to feel cheated – but I’m pretty sure I’ve come up with a menu that will make my husband pretty happy. Plus, everything is gluten-free so Celiacs can enjoy.
I already have steak and bacon in my freezer, and fresh green beans in my fridge, so I thought I could pick up some scallops or shrimp and make Bacon-wrapped seafood (one of his favorites), our favorite steak, and copycat Outback green beans.
For dessert, I’m going to make my favorite dessert from AllDayIDreamAboutFood.com – Skillet Chocolate Chip Cookies. We eat ours fresh out of the oven with a small scoop of SoDelicious Coconut Milk vanilla ice cream (make sure you get the carton with only 1gram of sugar). SO GOOD! I’m not even kidding about this one, this skillet cookie is my all-time favorite sugar-free recipe! I use Lily’s stevia chocolate chips in mine.
