It was brought to my attention recently that side dishes aren’t really my thing – especially not low-carb side dishes that I can enjoy with my kids. After eating dinner at a friend’s house recently, my daughter summed up her experience with an awed, “And she made SIDES, mom! We didn’t just have a main dish!”
So, OK, maybe my side dish game has been lacking a little lately. I often prepare big, one-dish dinners to feed my 5 kids, and I don’t often prepare side dishes because to me, side dishes = lots of extra work and clean up.
But to make dinner more interesting and enjoyable, I’m adding one or two of these sides to our rotation every week. We’ve been loving them so far!
