Low-Carb Bacon Feta Breakfast Bake
Delicious, low-carb THM "S" breakfast recipe!
- 8 large eggs, whisked
- 1/2 cup chopped red, yellow, or orange bell pepper
- 1/4 cup diced onion
- 3 oz crumbled feta cheese
- 10 slices cooked bacon, crumbled
- 1/2 tsp garlic powder
- 1/4 tsp salt
- 1/4 tsp black pepper
- 2 cups baby spinach
- 3 green onions
Preheat oven to 350 degrees.Spray a loaf pan with coconut oil spray. Set spinach aside, and combine the rest of the ingredients in a medium mixing bowl. Stir all ingredients well. Place 2 cups of fresh spinach in the loaf pan, then pour the egg mixture over the top of the spinach and spread it out with a spatula so it's even. Bake (uncovered) at 350 degrees for 35-40 minutes or until eggs are completely cooked through. Garnish with sliced green onions.
