I can always use a yummy breakfast recipe, and this one is a winner!

My kids and I love this recipe. It's delicious, and it fits in perfectly with a THM lifestyle!

This is one of my favorites, but honestly, what I REALLY love about it as that you can get some extra veggies in. But these veggies are dressed up just enough that it's not a chore to eat them.

You will need pre-cooked bacon for this recipe. Bacon bits are an option, or you can use this super easy method for cooking bacon – I like to make extra for snacks and other breakfasts during the week.

The steps to this delicious breakfast bake are easy. First, you'll spray loaf pan with coconut oil. Then whisk the eggs in a mixing bowl.

Then you'll add the bell peppers and onions (you can omit this step if you don't like peppers or onions, but they add something extra to the Breakfast Bake and I think they're delicious!).

Next you'll add the bacon and feta cheese – you don't want to skip either of these! You'll want 3 oz of feta cheese. I just eyeballed it and got 3/4 of the 4 oz container that the feta cheese comes in.

I've heard from others that cheddar cheese and goat cheese also make good substitutions for the feta if you're not a fan.

The seasoning comes next – you'll want to add 1/2 teaspoon garlic powder. Then add 1/4 teaspoon salt and 1/4 teaspoon pepper and stir all of the ingredients together really well.

It's time to bust out the spinach! Place 2 cups of baby spinach in the sprayed loaf pan and pour the stirred egg mixture over the spinach.

Bake, uncovered, for 35-40 minutes or until the eggs are cooked all the way through. Garnish with green onions, slice, and serve!

Low-Carb Bacon Feta Breakfast Bake

Delicious, low-carb THM "S" breakfast recipe!
Prep Time 10 minutes
Cook Time 40 minutes

Ingredients
  

  • 8 large eggs, whisked
  • 1/2 cup chopped red, yellow, or orange bell pepper
  • 1/4 cup diced onion
  • 3 oz crumbled feta cheese
  • 10 slices cooked bacon, crumbled
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 cups baby spinach
  • 3 green onions

Instructions
 

  • Preheat oven to 350 degrees.
    Spray a loaf pan with coconut oil spray.
    Set spinach aside, and combine the rest of the ingredients in a medium mixing bowl.
    Stir all ingredients well.
    Place 2 cups of fresh spinach in the loaf pan, then pour the egg mixture over the top of the spinach and spread it out with a spatula so it's even.
    Bake (uncovered) at 350 degrees for 35-40 minutes or until eggs are completely cooked through. Garnish with sliced green onions.
