Perfect, easy hard boiled eggs in the Instant Pot! Thee are fast and easy to peel! #lowcarb #trimhealthymama #thm #instantpot #boiledeggs

If you've been looking for a way to make easy to peel hard boiled eggs, this is for you!

I often encourage fellow-THMers and ladies that I coach on THM to spend just 30 minutes per weekend preparing for the week ahead. For me, this often means preparing a staple like hard boiled eggs, brown rice, or quinoa. I also try to make a dessert or quick treat to get me through the week – always having something available to eat makes a big difference in my ability to stick to the plan!

These instructions are by no means new; in fact, I would love to give credit to the original creator of this method if I could figure out who came up with the idea! These easy to peel hard boiled eggs are also easy to make, perfectly cooked, and ready in minutes!

The critical component to perfect, easy to peel hard boiled eggs is an Instant Pot – it steams the eggs instead of actually boiling them!

I have a secret weapon for perfect hard boiled eggs – these Instant Pot inserts double-stack in your Instant Pot to make a lot of eggs at once:

The method is simple: Place the shorter stackable egg steamer insert in the Instant Pot, and place 7 eggs in the 7 spaces. Then stack the taller one above it and place 7 more eggs in the top rack. If you don't think you need 14 hardboiled eggs at once (although they should last for a week), you can just use one rack.

Add 1 cup of cold water to the Instant Pot, put the lid on, and move the Instant Pot Steam Release Handle to “Sealing.”

Set the pressure level to “HIGH” and manually set the cooking time to 5 minutes.

Once the Instant Pot reaches pressure, the five minutes of cooking time will begin. After those five minutes are up, let the pressure release naturally for another 5 minutes. Once you get to five minutes of pressure release, use a pot holder and move the Steam Release Handle to “Venting.”

As soon as the steam has released and you can open the Instant Pot, use tongs to transfer the eggs to a bowl of ice water and let them cool there for another five minutes.

Basically, you'll cook the eggs for five minutes, let the pressure release naturally for five minutes, and then cool them in the ice water bath for another five minutes. That's it!

This method has made it perfect hard boiled eggs quick and easy! They are perfect for Trim Healthy Mama “S” snacks, or you can use the egg whites for an “E” or “FP” lean protein source. I also often use them to make deviled eggs – yum!
